In a 5 liter saucepan, usually make borsch from 3 liters of water, the rest of the volume will be occupied by vegetables and meat. This amount of water, according to the classic recipe, requires 300-400 grams of cabbage. However, you can deviate from the recipe by following your own taste preferences. If you want to get a thicker borscht, you can slightly increase the amount of cabbage or decrease it so that there is more broth in the finished borscht.

The amount of cabbage also depends on the softness of the leaves. If the cabbage is young, it is practically not felt in the borscht; you can put more of it and put it after the potatoes so that it does not become too boiled. And if the cabbage is stale or coarse variety (cabbage leaves are thick with powerful veins), it is better to take a smaller cabbage, chop it thinner and cook in borscht, adding 10 minutes before the potatoes.
