For the salad, choose a solid large carrot, without black spots and cracks. Better to take sweet carrots (try in advance), which in salads, together with salt, acquires a special "sweet-salty" taste.

It is desirable that all vegetables are approximately the same size. Before cooking, carrots should be washed well and scrubbed. But it is undesirable to peel carrots with a knife, as well as cut them into pieces. After rinsing the root vegetables under running water, put them in a saucepan and pour over slightly salted boiling water. Bring to a boil over high heat, then reduce and cook, covered. You can cook carrots on the stove in a saucepan - 20-25 minutes; in a double boiler - 30-35 minutes; in a multicooker - the time depends on the selected mode; in the microwave - in a special dish for about 10 minutes. The readiness of vegetables is checked with a knife. If the tip enters the carrot easily, then it is already cooked. You can turn off the stove and drain the water.

You can also use a pressure cooker, but it doesn't make much sense: the cooking process itself is short (6-7 minutes), but the time is spent waiting for the steam to release. If you forgot to prepare vegetables in advance for Olivier salad, you can win precious minutes by cutting the carrots into pieces before boiling and placing them in a bag and in ice water to cool.
