Why honey mushrooms turn black when cooked?

We note right away that the darkening of honey agaric during cooking is a natural process. All mushrooms change color slightly with prolonged exposure to water and heat. However, experienced mushroom pickers know that mushrooms generally darken even before cooking. This happens during cleaning before cooking. This is how mushrooms react to air. That is, the darkened mushrooms are edible, you can eat them.

If you want the honey mushroom color to remain unchanged - yellow-brown, prepare a saucepan or bucket with water slightly salted and acidified with vinegar or lemon (citric acid). For three to four liters, two or three tablespoons of salt and a squeezed quarter of lemon are enough. In the process of processing mushrooms and their subsequent cutting, put them in prepared water. Thus, honey mushrooms will not oxidize in air and, accordingly, will not turn black. Then the water should be drained and cook mushrooms on prescription.
