Salted mushrooms often mold during storage - this is a normal process, because honey mushrooms do not close tightly when salted, just mold must be periodically removed from it. Usually honey mushrooms are salted in large jars, and even a whole family will eat one jar for about a week, or even two. This is a long time, which is why mold is formed. But this is "normal" mold, which can be simply washed off with water.

Remove the mold that appears on the top layer with a spoon, picking up the whitish mushrooms. Next, wipe the outer and inner edges of the can with a cloth dipped in vodka or vinegar - such an environment is destructive to harmful microorganisms. Drop a small amount of vegetable oil on top of the mushrooms and pour over them with vinegar to form an impenetrable film and avoid further damage to the mushrooms. In the future, just rinse the salted mushrooms before serving, the most picky ones can boil the mushrooms for a couple of minutes in boiling water.

Another option for dealing with mold - instead, cover the mushrooms with gauze soaked in a solution of water and citric acid. Use chopped horseradish on top for extra protection.
